Food & Restaurant
Latinos have a rich and flavorful cuisine which should not be lost just because we live in the U.S. Fortunately there are several good sources of Latino food products in the Philly area. We have also found many supermarkets are open to carrying specific products if you ask them to – talk to the store, produce or deli manager depending on what product you want. Dishes or recipes that are part of your country’s heritage are something which should be enjoyed with friends and passed down to your children. Most of the area supermarkets carry the typical Goya/Mexican line of products but several have additional products catering to Hispanics of other countries-of-origin and fresh items.
If you’re looking for crema de leche, it can be found as ‘Table Cream’ in the canned milk section of many supermarkets.
A good substitution for ‘Papa Criolla’ (a popular South American small yellow potato) is the baby yellow or gold potatoes now sold in small net bags in many produce departments.

Ajiaco
Ingredients:
1 can Chicken Broth
½ package Baby Yellow Potatoes (Papa Criolla)
3 Russet/white potatoes
2 Red potatoes
1 Chicken breast
Guascas (Colombian herb)
3-4 small Corn-on-the-Cob
Capers
Avocado
Crema de Leche (table cream)
Peel the white and red potatoes and boil them along with the yellow potatoes (skin on) in the chicken broth and about 2 cups of water until they are so soft they begin to fall apart. At the same time in a separate pot, boil the chicken breast until cooked. When potatoes begin to fall apart, mash them in the broth until they are pureed — you can use a hand masher or a hand mixer. Then skim most of the potato skins from the broth. Add the guascas and corn and simmer covered for about 15 minutes.
Shred the chicken into small pieces and add into the broth. The capers, chopped avocado and crema de leche should be added to each bowl of Ajiaco immediately before eating.

Share one of your favorite or hardest-to-find hispanic recipes here.
One of our favorites from the country of Colombia is Ajiaco (or Colombian Potato Soup). This hearty soup is especially good for the late Fall and Winter climate here in Philly when you really need to warm up from the inside. The secret is the use of three different kinds of potatoes and the guascas.
